Zesty Chicken and Vegetables.


Over this month we have been in the middle of a sermon series at church called "Lets Get Healthy".  What a great way to start off the month of January.  

Ok now... let me preface.  I in no way made any types of resolutions to workout more, lose weight, or set some ridiculous goal for me to reach.  Let's just be honest..... I would be setting my self up for a major failure!  

But after this sermon series I was very convicted about many things in my life.  Not only about my self physically but also my personal relationship with Christ.  This post is going to focus on the physical convictions that I have.  

Since I started my new jobs nearly 6 months ago I have been doing a very bad job preparing healthy meals for my family.  If I'm being truly honest then I would tell you that I have been all around bad about preparing any meals for my family.

and the recipient of the Worst Wife of the Year Award goes to........ ME!!!

So this week I took the first step and prepared a healthy meal.
You will need:
4 sheets of aluminum foil
4 chicken breast
Basil
2 Garlic cloves
1 Red, yellow, orange bell pepper
1 yellow onion
lite zesty italian dressing
salt and fresh ground pepper
4 tsps of olive oil


Prep time takes about 15 minutes.  You seriously can't beat that!  Before tackling the veggies pre-heat the oven to 375 degrees.   Wash all veggies thoroughly.  Julienne all bell peppers and dice the onion.  Set all veggies to the side until your ready to top the chicken.
Place chicken breast on foil square and top each with:
1 tsps of olive oil
season with pinch of salt and pepper (I think I may try sea salt next time)
top with garlic, bell peppers, and onions
sprinkle with basil
top all with italian dressing
After adorning the chicken with all those fabulous veggies.... fold the sides of the foil to create a fun little pouch.  Transfer all foil packets to a baking sheet and bake chicken on 375 for 25 to 30 minutes until chicken is cooked throughout.


This meal was a serious winner with B!  He has personally requested it again and will be eating it for lunch tomorrow!  Hope y'all enjoy!

Has it really been 5 months since my last post?!   I seriously can not even believe that I just fell off the end of the "blog world".  I promise that I really did miss you little blogging space.  (I feel like my blog deserves a bigger apology then that).

So I'm going to have to play some major catch up to explain the reason for my extended vacation.  In my defense.... I did have some great posts planned during the past five (missing) months but they just never got from my head and iPhoto to actual words on the screen.  It's so sad when that happens!

On to my list of excuses.

So around the time of my last post I got a phone call from a dentist, also a friend of my dads, about a hygiene opening at his office.  He called and told me to pray about it and get back to him.  Isn't God amazing!!  I wasn't unhappy with the current job I had but the hour commute, one way let me add, was beginning to wear on me after almost a year.  B and I began praying and prayed for weeks.  The new job was only 2 days a week so my hours would be cutting from 3 1/2 days to two.  We continued to pray.  A few days later I receive a call from my dads friend and he has found me another day to work with a friend of his.  There was no question that I would be making the transition to the new jobs.  Now here's where things get really crazy so hold on.  A few days after accepting and interviewing for the new jobs I get a call from a dentist here in Conway offering me a full time (4 day a week) position.  I explained to him that I had just accepted three days of work just a few days prior and he still asked me to do a working interview for 1 day a week!  My God provides!!   So... I am now working for 3 great dentists in three different towns! I am now considered full time, and providing more for my family, and have less of a daily commute!

So the jobs all wrapped up around mid September and B and I were off to our next adventure.

Coinciding with the new job story... B and I started working with the youth group at our church.  I was already singing in our worship team so I really didn't feel the Lord leading me to become a leader for our youth.  B was ALL ABOUT IT!!  He does great with that age group and loves it!  Me on the other hand.... older kids truly scare me!  B talked me into going with him to the first night just to try it out... well we are both now leaders with our fabulous youth group!! Y'all I cannot even explain to you how amazing these young adults are BUT they are AWESOME!!

In November B and I took our funnest Christmas cards to date!!  If we are Facebook friends then you've probably seen at least one of the masterpieces captured that very HOT day!  If not then let's remedy that and become Facebook friends!!



This past fall I joined a bunco group!! It's seriously the most fun! B called me an old lady when he heard I had joined but it's great! I play with a group of ladies from church and even hosted our December meeting.  It was my first hostessing experience in our home and I'm ashamed to say I forgot to take detailing photos.  These ladies are so great!!

Now that we've caught up to December we can talk about the trip to the Caymans!!  If you've read in the past you might have come across a few posts where I talk about my brother being in vet school in the Caymans.  Well this past month He had his white coat ceremony and is now starting his last year of rotations in Oklahoma.  We were so super blessed to be able to go.  Christmas time in the Caymans... you must go!




Now that I have you all updated on my hiatus hopefully I can keep up with the part of my life.
